1、番薯葉經高溫加熱後,會滲出水分,因此雞湯份量不宜多,以免湯汁過多而沖淡菜肴的味道。(B5T.m~#o6^

2、清雞湯本身有鹹味,下鹽調味時,要先試味再調味,以免成菜過鹹發苦。o@Ydt"~'pN0H

3、番薯葉經飛水後,可除去苦澀味,但不宜久炒,否則菜葉會變老發黃,還會失去爽脆的口感。
