1.將蝦仁挑去沙線,放入少許鹽、料酒醃製二十分鐘;

2.青瓜洗淨先切成約3厘米的段,再將其切成片;雞蛋打散成蛋液,薑切片,蔥切成段並將蔥白與蔥葉分開;

3.熱鍋放油,倒入蛋液,快速劃炒成小塊狀後舀出待用;

4.鍋內再放油,下入薑片與蔥白爆香,再放入醃製好的蝦仁,快速翻炒幾下後放入青瓜,大火翻炒一分鐘左右放入事先炒好的雞蛋;
